The Dnipro Bakery operates in accordance with Torah rules and produces handmade matzot. All production processes, from harvesting to baking matzot, are performed by Jews. It's all about Kavanah-their intention. It takes 18 minutes to make matzot, from kneading the dough to baking. This is the time specified in the Jewish handbook of religious rules and rituals, Shulchan Aruch, for making matzot. The main task is to prevent fermentation so that the matzot does not rise, as it did 3000 years ago. The Dnipro facility produces about 220-300 kg of matzot per day.
